WFMW Backwards Day - lemonade cake

Once upon a time……. I had this wonderful recipe for a delicious lemon cake called Lemonade on a Fork. You made a lemon flavored cake and then while it was still warm, poured a glaze over the top and as it cooled it turned into a kind of crunchy crust. Ahhh, it was so tasty. Unfortunately, I did not transfer the recipe into my offical card box. I was somehow always able to find the ripped-out page from the magazine no matter where it ended up. Until now. Apparently, it did not make the move overseas. :( I have tried a couple of times to recreate it from my memory and ‘ingenuity’, (no laughing), but it has never come out the same.

So I am wondering, do you have a delicious lemon cake recipe, that does not come from a box mix? Not to be a food snob, but cake mixes are sinfully expensive here in Chiang Mai.
Lemon is one of my favorite dessert flavors. Many things are adverstised as lemon here, but they really mean lime. I like lime, but it is not the same as lemon!

    I have a recipe that may work. It is my grandma’s “Sunshine Cake.”

    7 egg yolks, separated
    Beat yolks with mixer until lemon colored (quite a while)
    Add 1/4 tsp. salt and 3/4 cup sugar
    Beat 3 more minutes
    Add 4 tbsp. cold water — stir or mix.
    Add 1 cup cake flour and flavoring — 1/2 tsp. to 1 tsp. lemon juice

    Use largest bowl for egg whites.
    To 7 egg whites, add 1/2 tsp. salt and 1/2 tsp. cream of tartar
    Beat until whites hold peaks (wire whisk will make cake airier).
    Add 3/4 cup sugar to whites — slowly.
    Pour yellow mixture into whites — fold lightly.

    Pour into large angel food cake pan — do not grease. Bake at 325 degrees for 1 hour (check early). Cool.

    Note: we would sometimes make a simple syrup by boiling lemon juice and sugar and pour this over the top of the cake for a delicious glaze. I hope this works for you!

    Anyway, the only recipe I have requires a cake mix. Here it is, complete with the glaze you are looking for. You could use fresh lemonade instead of frozen:

    LEMONADE CAKE

    1 18 1/2-ounce package lemon
    cake mix
    1 3 1/8-ounce package instant
    pudding and pie filling
    4 eggs
    1 cup water
    1/4 cup vegetable oil
    1 6-ounce can frozen lemonade,
    thawed
    2 cups sifted powdered sugar
    Combine cake mix, pudding mix, eggs, water and oil in large mixer bowl; blend well, then beat 4 minutes at medium speed. Turn into greased and floured 13×9x2-inch baking pan. Bake in 350-degree oven for 45 to 50 minutes or until cake is done. Cool in pan 5 minutes, then prick cake with 2-tined fork or skewer completely through to bottom of cake. Thoroughly blend lemonade concentrate and powdered sugar. Gradually spoon glaze over cake until completely absorbed. Cool in refrigerator, Top with Cool Whip right before serving.

    This recipe has been handed down in my family. It was originally my great-grandmothers, and we always had it on the 4th of July. It does call for a box of cake mix, but you can download a recipe to duplicate a box cake mix at http://www.topsecretrecipes.com (it will cost a small fee- I think it’s 99 cents…) I don’t know if you can get lemon jello in Thailand either, but you could probably substitute grated lemon zest and it would be great!

    Lemon Jello Cake
    1 box lemon or white cake mix
    1 small box lemon jello
    3/4 cup water
    4 eggs
    3/4 cup oil
    juice of one lemon (3 Tablespoons)
    1 cup powdered sugar

    Mix cake mix, jello mix, water and eggs. Beat for 3 minutes. Add oil, beat 3 more minutes. Bake in a 9×13 pan at 350 for 50 minutes. Cool cake in pan for 1/2 hour. Use a chopstick to poke holes all over cake. Mix lemon juice and powdered sugar and drizzle glaze over cake.

    What a delicious collection of recipes! My tummy is growling just reading about lemonade cake. I have distinct memories of my mother making an amazing cake with a lemon glaze just like you mentioned, Tina. I need to check with her (she’s traveling right now) and see if she still has it.
