It is so wonderful. No cooking and little clean up. I added the muffins to our menu, it seems to just round it out a bit. Sometimes they are just plain muffins, or I will add fruit, depending on what I have around. Especially in hot season, after we have spent all morning at church and are tired and sweaty and worn out in Thai. We need a simple evening of easy foods and all settle down to watch a movie. Bonnie,

Is it OK to leave it out? Does is really make a difference in your expert opinion? I've always wondered about this. Keep the recipes coming. I'm always looking for new recipes.
