Kathy,
Her recipe looks great! The tamarind paste is a key ingredient, one I have seen left out in Western recipes.
Usually it is served with tofu too, even if shrimp or chicken is also included.
I thought her play by play was hilarious and was laughing out loud when I read it to Greg.
Your new tool would be very handy in making Phad Thai, give it a try. :)

Tina - do me a favor and check this site:

http://scribbit.blogspot.com/ Have you ever been to her blog? She just made a (looks yummy if complicated) Pad Thai and I'd love to know if it looks authentic.

I've been meaning to ask how I was supposed to use my Christmas presents. Thanks for the photo demonstration! :)

Sandy, you are right, toasting the cashews does make them much tastier, but sometimes I am lazy and Greg will eat them however he can get them.

Tim, do you even have to ask? Bring everyone on over! I will even go light on the chili paste, just for you.

I just noticed that I used 1 kg of chicken and 4 cups of veggies. Mixing my measurements, oh well, that is what you get when you take an Imperial system girl like me and plop her into a metric country. :)

MMmmmmmm, that looks tasty. I'm very fond of chili paste (in moderation) but (as you may remember) a spice-sissy.

Can we come over for dinner? That looks like it would really clear the sinuses! (A bunch of us are sick, this week).

Hi Tina,
Looks yummy. I almost made this dish tonight, but we spent too much time at the park with Beth and kids. I use the same ingredients and love that chili paste. Can't go back to the bland taste at most restaurants:-). One other thing I do is fry the cashew nuts before starting and they are nice and crunchy. Have a great day!
